​This one-skillet wonder was perfect for a quick dinner on our first camping trip of the year (Hello, Galveston!). It's a great option for a busy weeknight meal! Just brown some ground beef, add ramen noodles, stir-fry veggies, and water—dinner's ready in minutes. Simple, filling, and surprisingly delicious!
​RECIPE
Ingredients: 1 lb ground beef • 2-3 oz pkgs beef-flavored ramen noodles, crushed • 2 c frozen stir-fry vegetables, thawed • 2 c water • optional: 2 T green onion, sliced.
​Instructions: Brown beef in large skillet; drain. Stir in one seasoning packet; remove from skillet. Add crushed noodles, remaining seasoning packet, vegetables & water. Bring to boil, reduce heat to medium, cover and simmer 3 minutes, stirring occasionally. Return beef to skillet & heat through. Stir in green onion if desired.
